Best Salsa Ever

At least that's what Dusty said the 1st time I made this recipe. And I have to agree with him! This colorful salsa is the perfect combination of sweet and tangy with just enough spiciness, makes a perfect topping for fish, or is fantastic enjoyed on it's own with crispy tortilla chips. We should strive to eat a rainbow of colors and flavors and this dish provides exactly that. The more colorful our diet, the more vitamins, minerals and nutrients we get. This Pineapple Rainbow Salsa is loaded with vitamins B and C, calcium, copper, selenium, magnesium and lycopene.


Pineapple Rainbow Salsa:

1-1 1/2 cups fresh diced pineapple

1 medium tomato, diced

1 red, yellow, orange or green bell pepper, seeded and diced

1-2 jalapeno or serrano peppers, diced

2-3 cloves of fresh garlic, minced

1/4 cup red onion, chopped

1/4 cup fresh cilantro or parsley, chopped

3 tablespoons fresh lime juice

1-2 tablespoons vinegar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon chili powder or cayenne


Toss all ingredients together in a mixing bowl and serve or refrigerate for up to 1 week. The longer the ingredients marinate together the more the flavors will build. Amounts of ingredients and spices can be adjusted to you own personal taste. I haven't tried this yet but for a more sauce-like consistency you can probably blend all ingredients together is a food processor. Happy snacking!
